Rated Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking 8/10
A curious and delightful cookbook that has some recipes but reads more like a set of informative essays about food - the science of it, the culture of it, how it works. Highly recommended, and a good companion piece to [b:Consider the Fork: A History of How We Cook and Eat|13587130|Consider the Fork A History of How We Cook and Eat|Bee Wilson|https://images.gr-assets.com/books/1344733081s/13587130.jpg|19174482]. It's like spending time with a charming, enthusiastic chef, and it will make you hungry. I haven't actually used it as a cookbook yet, but it's much more a gestalt "here's how flavor and texture work, here's how you should approach cooking" book than a "make this thing in this way" book.
